Yesterday was a lazy, homey day for me so we (me and my twin sister) decided to do some baking. As we usually opt for standard sweet cakes, we decided to do something different and went for cheese and walnut scones. I was a bit nervous as previous experimental bakes have not turned out so well but I was actually really pleased with the outcome. I would 100% recommend eating them warm straight from the oven with a little (melted) butter but they were still great the day after sprinkled with some cheese. Personally, I love the crunch of walnuts and I am always a sucker for wholemeal things so these were just my cup of tea. We used a super small cutter for these which I actually preferred as they make a perfect snack with a cup of tea.
Here is the recipe:
Makes 40 baby scones or 16 normal sized ones.
Ingredients:
450g plain wholemeal flour
2tsp of bicarbonate of soda
85g butter
100g smashed walnuts (the rolling pin and plastic bag method is my fav)
150g mature grated cheese
300ml skimmed milk
Method:
1. Preheat the oven to 200c and grease a baking sheet
2. Sift the flour into a large bowl. Add the butter and rub it in with your fingertips. Stir in the cheese and walnuts and enough milk to bring the mixture into a soft dough.
3. Gently roll out the dough on a lightly floured surface until it is around 2.5cm thick. Cut out your desired amount of circles using the rim of a glass or a cutter. Place on the greased baking sheet.
4. Bake in the oven for 15 minutes or until golden brown and firm to the touch.
5. Transfer to a wire rack and serve warm with butter.
